The Chilean sea bass, also known as Patagonian toothfish, is very similar to the black cod or sablefish of the north Atlantic. The toothfish is long-line harvested in the deep southern ocean waters of Antarctica, Argentina, Peru and Chile. The average commercially harvested Chilean sea bass weighs about 20 pounds, but it can grow to be 250 pounds. They live to be 50 years old.
