Opah is available year-round. The opah harvest is largely incidental, since the opah is a solitary fish and does not swim in schools. Harvests of these individual fish follow no set pattern or ocean in a specific geographic area. Most of the harvest is sold through the Honolulu Fish Auction, while some boats market their catch directly. Serving Size
The average serving size of an opah steak is one half pound. These steaks are presented skinless and boneless and are cut to at least one inch in thickness. Most people tend to quickly marinate the Opah before grilling and broiling. If eaten as sushi, the serving size can be reduced.


Did you Know? Opah is typically harvested as an incidental catch by long-line boats fishing over seamounts in the Pacific. The opah migrates vertically up and down seamounts seasonally in search of food, but generally lives at depths between 300 and 1200 ft. The opah weighs between 50 and 210 lbs, does not travel in schools, and is commonly harvested alongside tunas and billfish. Its primary diet consists of squid and a variety of other small fish. Historically, the opah was regarded as good luck and was given away rather than sold.
